Ingredients

  • 2 beef steaks (about 200 g each)
  • 1 tbsp honey
  • 0.5 untreated lemon (zest and juice)
  • 0.5 tsp coarsely ground red pepper
  • 1 garlic clove (pressed)
  • 1 tsp coarsely ground black pepper
  • Salt
  • 1 small red onion (chopped)
  • 1 garlic clove (pressed)
  • 80 g cherry tomatoes (halved)
  • 80 g diced zucchini
  • 0.5 ripe mango (peeled and chopped)
  • 1 tbsp honey
  • 1 tbsp Olive Oil
  • 2 tbsp lemon juice
  • Salt
  • ground pepper

Instructions

    Mix honey, lemon zest, lemon juice, red pepper, and garlic; marinate steaks for about 20 minutes.

    Combine red onion, garlic, cherry tomatoes, zucchini, and mango. Whisk honey, olive oil, and lemon juice with salt and pepper, then fold into the remaining salsa ingredients and season to taste.

    Pat steaks dry and sear in hot clarified butter for 3–5 minutes on each side (depending on preferred doneness). Remove, season with salt and coarse pepper, wrap in foil, and rest for about 5 minutes.

    Plate steaks with mango salsa and serve immediately.
