Beef Steak with Mustard Sauce

Ingredients
- 4 slices of beef steak (about 220 g each, e.g., from the rump area)
- Salt
- Pepper (freshly ground)
- 2 tbsp Vegetable oil
- 150 ml meat broth
- 150 ml Heavy Cream
- 1 tsp mustard powder
- 250 g cherry tomatoes (red and yellow)
- 150 g arugula
- 4 tbsp white balsamic vinegar
- a pinch of sugar
- 4 tbsp olive oil
- 1 tbsp hazelnut flakes

Preheat the oven to 140°C with both top and bottom heat.

Rinse the meat, pat dry, and season with salt and pepper. Sear each side in hot oil in a pan. Place on a rack (under a fat pan) in the oven for about 10 minutes, adjusting time based on thickness and desired doneness.

Deglaze the pan with broth. Stir in cream and mustard powder, letting it thicken slightly over a few minutes. Season with salt and pepper to taste.

For the salad, wash and halve the tomatoes. Wash, trim, and dry the arugula. Mix balsamic vinegar, sugar, and olive oil. Season with salt and pepper, then combine with tomatoes and arugula.

Plate the steaks on warmed plates with sauce, add a small portion of salad on top, serve the remainder separately, and sprinkle hazelnuts before serving.
