Beef Salad with Radishes

Ingredients
- 1 l beef broth
- 500 g boiled beef (Tafelspitz)
- 1 bunch radishes
- 3 shallots
- 1 EL chopped parsley
- 1 piece fresh horseradish
- 4 EL white wine vinegar
- 4 EL sunflower oil
- Salt
- pepper (ground)
- 1 pinch sugar
- parsley for garnish
Instructions

Bring the beef broth to a boil in a pot, add the meat and simmer covered over low heat for about 1 hour until tender. Let it cool in the broth.

Wash, trim, and slice the radishes into thin rounds.

Peel the shallots and cut them into fine rings.

Slice the cooked beef into strips roughly 2 cm long and thin.

Peel and grate the horseradish coarsely.

Whisk together vinegar, oil, salt, and pepper; taste and adjust seasoning.

Combine all ingredients with the dressing in a bowl.

Serve the radish-beef salad on plates.

Sprinkle finely chopped parsley over the salad for garnish.
