Beef salad with avocado

Ingredients
- 2 ripe avocados
- 1 EL lemon juice
- 250 g mixed salad (e.g., lamb's lettuce, arugula, sorrel)
- 600 g beef fillet (pre‑cooked)
- flour (for dusting)
- 4 EL sprouted oil
- 2 EL honey
- 1 EL dark soy sauce
- 1 EL lime juice
- Salt
- pepper (ground)
Instructions

Halve the avocados, remove the pit, gently squeeze the flesh out of the skin, slice into thin wedges and immediately drizzle with lemon juice.

Wash, rinse, dry, and pat the salad leaves.

Rinse the beef, pat dry, trim if necessary, cut into strips and lightly dust with flour. Heat 2 EL oil in a pan and sear the fillet strips until browned on all sides. Mix honey, soy sauce, and lime juice; add to the meat and simmer for 1–2 minutes. Season with salt and pepper.

Combine the salad with the beef strips and avocado wedges, plate, season with additional salt and pepper, drizzle lightly with oil if desired. Serve with garlic or herb baguette on the side.
