Beef Roast with Onions

Ingredients
- 4 slices of beef tenderloin (about 180 g each)
- 4 onions
- Salt
- Pepper (freshly ground)
- vegetable oil (for frying and searing)
- 150 ml meat broth
- 100 ml dark beer
- 1 tsp starch
- ground cumin
- flour (for dusting)

Wash and pat the beef slices dry. Peel the onions; dice one finely, halve the other two and cut into thin strips. Season the beef with salt and pepper, then sear in 2 tbsp hot oil until browned on both sides.

Remove from pan, sauté the diced onion until golden brown, deglaze with meat broth and beer, reduce slightly, and thicken lightly with starch mixed in 1 tbsp cold water. Taste with salt, cumin, and pepper; return the beef to the sauce and cook at low heat for 3-4 minutes until pink through.

Dust the onion strips with flour and fry in hot oil for 3-4 minutes until golden brown. Drain on paper towels and serve the beef slices topped with the sauce. Optionally accompany with potato gratin.
