Beef Roast with Fruits

Ingredients
- 1.5 kg beef (top sirloin or loin)
- Salt
- black pepper (freshly ground)
- 5 shallots
- 300 g sour apples
- 150 g fresh plums (or pickled)
- 3 Tbsp plant oil
- 250 ml red wine
- 350 ml beef stock (or meat broth)
- 5 juniper berries
- 3 black peppercorns
- 5 cloves
- 1 cinnamon stick
- 10 g cold butter (optional)

Preheat the oven to 140°C fan.

Wash the beef, pat dry and remove any skin and tendons. Rub all over with salt and pepper. Peel the shallots. Wash the apples, quarter them and remove cores. Wash the plums, halve them and remove seeds. Heat oil in a roasting pan and sear the meat on all sides. Reduce heat and add the shallots, apples and plums. Deglaze with red wine and add beef stock, juniper berries, peppercorns, cloves and cinnamon stick. Cover and roast in the preheated oven for 1–1.5 hours, turning once.

Use a cooking thermometer to cook until the internal temperature reaches 65°C.

After roasting, remove the meat and wrap it in foil. Remove the fruit and shallots, strain the sauce through a sieve into a small pot, season with salt and stir in cold butter if desired for binding.

Serve the beef roast with the fruit and shallots on a hot plate, offering the sauce separately.
