- 1.2 kg beef roast (shoulder)
- 3 tbsp clarified butter
- Salt
- coarsely ground pepper
- 300 g thick-cut bacon (thin slices)

Preheat the oven to 200°C (400°F) with upper and lower heat.

Wash the meat, pat dry. Heat the clarified butter in a roasting pan and sear the meat on all sides for about 5 minutes. Remove it, rub with salt and pepper. Cover the roast thickly with bacon slices and place on a rack (fat drips into the pan below) in the preheated oven for 1.5 hours. It is best to use a meat thermometer; insert it into the center of the meat. At an internal temperature of 70°C the roast is pink, at 85°C it is fully cooked.
