Spiced Beef Roast

Ingredients

  • 6 sprigs rosemary
  • 1 tbsp coriander seeds
  • 70 ml Olive oil
  • 2 fresh garlic cloves
  • Salt
  • black pepper (freshly ground)
  • 1 kg beef (e.g., sirloin)

Instructions

    Preheat the oven to 200°C fan-forced.

    Rinse the rosemary, shake dry, pluck off needles and finely chop. Mix with coriander in about 50 ml oil. Peel the outer skins of the garlic cloves, cut them horizontally in half and separate 5-6 cloves. Peel, finely chop and stir into the rosemary-oil mixture. Season with salt and pepper.

    Rinse the beef and pat dry. In a pan, sear all sides in the remaining hot oil until browned. Transfer to a baking tray lined with parchment paper and brush with the spiced oil. Place the garlic cloves on top. Roast for about 30 minutes.

    Serve with flatbread and mint yogurt if desired.
