Ingredients
- 1 small 900g beef roast (e.g., roastbeef, loin or hip)
- 1 tbsp sharp Dijon mustard
- 4 fresh peppercorns
- 2 sprigs Rosemary
- 2 sprigs thyme
- 4 fresh bay leaves
- Salt
- Pepper
Instructions

Brush the beef roast with mustard, then lay the peppercorns, herb sprigs and bay leaves on top and tie everything together with kitchen twine.

Place the meat on a very hot grill and cook each side for 10 minutes.

When the outside is well browned but the center remains slightly pink, transfer to a plate and let rest for 5 minutes before slicing; flip once during resting.

Slice the meat and serve with foil-wrapped potatoes baked in the coals.
