Beef Fillet with Salad

Ingredients

  • 4 red bell peppers
  • 600 g beef fillet
  • Pepper
  • 20 g clarified butter (1 tbsp)
  • 80 g Arugula (1 bunch)
  • 3 tbsp Lemon juice
  • 1 tbsp soy oil
  • Salt
  • 0.5 tsp medium-hot mustard
  • pinch sugar
  • 20 g Parmesan

Instructions

    Wash, trim and quarter the bell peppers. Place them skin-side up on a parchment-lined tray and grill under a preheated oven broiler for about 10 minutes until the skins blacken and blister. Remove, place in a plastic bag, seal and let rest for 10 minutes. Then peel off the skins and cut the flesh into wide strips.

    Meanwhile rinse the beef fillet under cold water, pat dry and season all sides with pepper. Heat clarified butter in a pan, quickly sear the meat on all sides over high heat until browned, remove, cover and rest for about 10 minutes.

    Wash and spin dry the arugula. Whisk lemon juice with soy oil, salt, mustard and a pinch of sugar to make a vinaigrette. Slice the rested beef thinly, season lightly. Arrange the sliced beef, bell pepper strips and arugula on four plates. Drizzle with the vinaigrette, season with pepper and sprinkle grated parmesan on top.
