Beef Fillet with Polenta

Ingredients

  • 500 g beef fillet
  • 1 EL Mélange noir (or black pepper)
  • Sea salt
  • 2 EL wild garlic oil
  • 750 ml vegetable broth
  • 240 g cornmeal
  • 50 g grated Parmesan
  • 2 EL Butter
  • parsley (for garnish)

Instructions

    Bring the broth to a boil. Pour the cornmeal into the boiling liquid and stir well. Simmer the mixture, stirring constantly, for about 35 minutes until the cornmeal has absorbed the liquid. Remove from heat, add the grated parmesan and butter, and mix thoroughly.

    Divide the beef fillet into four portions. Pat each piece dry, season with Mélange noir, and brush with oil. Quickly grill all sides until browned, then salt, cut into bite-sized pieces, and serve on top of the polenta in portions. Garnish with parsley leaves.
