Ingredients

  • 1 kg beef fillet (center cut)
  • 1 Tbsp clarified butter
  • Salt
  • black pepper (freshly ground)
  • 1 head of garlic
  • 1 lemon
  • 1 small can peeled tomatoes
  • 1 tbsp Tomato Paste
  • 3 tbsp olive oil
  • 1 Shallot
  • 1 clove garlic
  • Salt
  • black pepper (freshly ground)
  • a pinch sugar
  • Tabasco

Instructions

    Separate the garlic head into cloves, do not peel them.

    Rub the beef fillet with salt and pepper. Heat clarified butter in a pan and sear the fillet over high heat on all sides. Transfer the browned fillet to a baking tray, place the garlic cloves on top, and bake at 200°C (392°F) for about 25 minutes on a middle rack.

    Let it rest slightly in an opened oven after turning off the heat.

    For the tomato sauce, sauté finely chopped shallot in olive oil until translucent. Add pressed garlic, cook briefly, then stir in tomato paste and add tomatoes with their juice. Break up the tomatoes, season with salt, pepper, sugar, and a few drops of Tabasco if desired, and simmer uncovered for about 10 minutes.

    Slice the fillet and serve with garlic, tomato sauce, lemon wedges, and a small salad garnish.
