Spare Ribs with Green Asparagus

Ingredients
- 2.5 kg beef spare ribs
- Sunflower oil (for basting)
- 2 Garlic cloves
- 1 onion
- 2 red chili peppers
- 50 g honey
- 1 tsp salt
- Pepper (freshly ground)
- 4 tbsp tomato paste
- 2 tbsp white wine vinegar
- Tabasco sauce
- 600 g fresh green asparagus

Divide the ribs into individual pieces, rinse and pat dry. Place in boiling water and simmer gently for about 20 minutes. Drain and pat dry. Peel and roughly chop the garlic. Peel and dice the onion. Wash, halve, and roughly chop the chili peppers. Combine with the onion, garlic, honey, salt, a pinch of pepper, tomato paste, vinegar, and Tabasco in a pot; bring to a boil with about 200 ml water. Reduce to a thick sauce for about 10 minutes and then let cool.

Brush the ribs lightly with oil and grill over high heat, turning occasionally, for about 20 minutes, basting with the sauce as you go. While grilling, peel the lower third of the asparagus, brush it with oil, season with salt and pepper, and place on the grill alongside the ribs. Grill for another 6-8 minutes, turning occasionally. Plate the spare ribs with the grilled asparagus on warmed plates and serve immediately.
