Ingredients

  • 250 g beef fillet
  • lemon pepper
  • 200 g shallots (or pearl onions)
  • 1 tbsp oil
  • 1 tbsp butter
  • 2 tbsp coarse Dijon mustard
  • honey
  • 100 ml beef stock (from a jar)
  • 150 ml Heavy Cream
  • 4 tomatoes
  • 40 g green olives
  • Pepper
  • a few basil leaves

Instructions

    Slice the beef fillet into 1 cm thick pieces and season both sides with lemon pepper. Blanch the shallots in boiling water, let stand for 5 minutes, rinse cold and peel off the skin.

    Heat oil and butter. Quickly sear the fillet slices on both sides, remove and set aside. Sauté the shallots in the pan fat until translucent. Stir in mustard and honey. Add beef stock and cream. Simmer covered for 15 minutes.

    Meanwhile blanch the tomatoes in boiling water for 1 minute, shock cold, peel, quarter and remove seeds. Cut tomato flesh into strips.

    Add tomatoes and olives to the sauce and warm without boiling. Season with salt and pepper. Lightly salt the fillet slices and return them to the pan. Cover and let rest for about 5 minutes. Sprinkle with basil leaves before serving. Pair with potato dumplings.
