Ingredients

  • 1 kg tongue
  • 4 tsp salt
  • bay leaf
  • 1 onion
  • 2 cloves of peppercorns
  • 2 tsp sugar
  • 2 tsp vinegar

Instructions

    Trim the tongue at the throat opening, cover it with cold water along with the salt, bay leaf, peeled and halved onion, peppercorns, sugar and vinegar in an open pot and let it simmer for 3 hours.

    During this time the surface of the water should only ripple slightly. After the cooking period cool the tongue in water, peel off the skin – which comes off easily – slice or cube it and proceed with further preparation.
