Beef Enchiladas

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 2 tbsp oil
  • 500 g mixed ground meat
  • 425 ml kidney beans
  • 212 ml corn
  • Salt
  • Pepper
  • chili powder
  • 2 Tomatoes
  • 200 ml salsa sauce
  • 6 large tortilla sheets
  • 50 g small bacon cubes
  • 150 g cheddar cheese
  • 300 g sour cream

Instructions

    Preheat the oven to 200°C.

    Dice the onion and garlic. Heat the oil in a pan. Brown the ground meat until crumbly. Add the diced onion and garlic, sauté briefly. Drain the beans and corn and add them to the meat mixture. Season with salt, pepper, and chili powder. Wash, core, and quarter the tomatoes. Dice half of the tomato flesh finely; cut the remaining flesh into large cubes and mix into the meat blend. Pour in the salsa sauce and combine all ingredients.

    Fill each tortilla sheet with 2/3 of the meat mixture, roll them up, and cut diagonally in half. Spread the remaining meat mixture on the bottom of a shallow baking dish. Place the rolled tortillas on top. Mix shredded cheese with sour cream and spread over the enchiladas. Bake in the oven for about 30 minutes until golden.
