Beef Curry with Almonds

Ingredients
- 800 g beef stew meat
- 2 onions
- 1 tsp coriander seeds
- 2 Tomatoes
- 1 chili pepper
- 1 tbsp Olive Oil
- 1 tbsp red curry paste
- 1 tbsp Garam Masala (Indian spice blend)
- 100 ml coconut milk
- 250 ml Beef broth
- 2 Organic Limes
- 20 g almond slivers (2 tbsp)
- Salt
Instructions

Rinse the meat under cold water and pat dry. Peel and dice the onions. Crush coriander seeds in a mortar.

Heat tomatoes briefly, drain, cool, peel, quarter, seed, and roughly dice. Wash, trim, and chop the chili pepper.

Heat oil in a pot. Sear the meat over high heat for about 5 minutes until browned. Add onions and cook for 1 minute.

Add curry paste, coriander, and Garam Masala. Deglaze with coconut milk and beef broth, add tomato cubes, cover, and simmer on low heat for about 1½ hours, stirring occasionally.

Meanwhile wash limes hot, pat dry, and cut into wedges. Toast almond slivers in a dry pan over medium heat until golden brown.

Squeeze some lime wedges to taste, season with salt, and pour the curry into four bowls. Garnish with remaining lime wedges and toasted almonds.
