Beef Carpaccio

Ingredients

  • 300 g veal tenderloin
  • mixed salad leaves
  • white balsamic vinegar
  • olive oil
  • Salt
  • ground pepper
  • mayonnaise
  • Lemon juice
  • capers

Instructions

    Wash salad leaves, dry them in a spin dryer and mix with salt, pepper, olive oil and balsamic vinegar. Whisk 5 tbsp mayonnaise with 3 tbsp lemon juice. Finely chop 1-2 tbsp capers and fold into the mixture. Season generously with pepper.

    Allow the veal tenderloin to thaw in the freezer and slice it into very thin slices. Arrange the carpaccio on four plates with the salad and drizzle with 2-3 tbsp of mayonnaise before serving.
