Ingredients
- 1 stalk leek
- 300 g cherry tomatoes
- 500 g pappardelle
- Salt
- 2 Garlic cloves
- pepper (ground)
- 150 ml dry white wine
- 1 tbsp freshly chopped parsley
- 100 g fresh parmesan

Wash, trim, and shake off excess moisture from the leek; remove the dark green parts, halve lengthwise, and separate the remaining leaves. Wash and halve the tomatoes.

Cook the noodles in boiling salted water until al dente. Peel and finely chop the garlic, then sauté it in hot oil until translucent. Add the leek and tomatoes, season with salt and pepper, pour in the wine, and simmer for 3–4 minutes.

Drain the noodles, let them dry briefly, combine with the parsley and vegetable mixture, toss well, and serve in preheated bowls. Sprinkle with parmesan shavings before serving.
