Beef and Pumpkin Soup

Ingredients
- 2 onions
- 2 Garlic cloves
- 750 g soup meat (with bones)
- Salt
- Pepper (freshly ground)
- 0.25 tsp allspice powder
- 0.25 tsp clove powder
- 0.25 tsp chili powder
- 1 pumpkin (about 2 kg)
- 250 ml unsweetened coconut milk (canned)
- 2 tbsp butter

Cut a lid from the top of the pumpkin, remove the seeds and peel off the flesh except for about a 1 cm wide rim. Roughly 500 g of flesh should be finely diced.

Peel and finely chop onions and garlic, then add them with the meat and all spices to a pot with about 1 l water. Bring to a boil, cover, and simmer for about 1½ hours. Add the pumpkin flesh and cook for another 15 minutes, then stir in coconut milk and continue cooking for an additional 15 minutes. Remove the meat, cube it, and return it to the soup; thin with water if needed. Stir in butter, taste, and serve as desired in a hollowed pumpkin.
