Ingredients
- 600 g potatoes (starchy, boiling type)
- 500 g smoked salmon
- 2 shallots (finely chopped)
- 100 ml heavy cream
- 1 tbsp horseradish
- 1 tbsp freshly grated horseradish
- 1 bunch dill
- oil for frying
- Salt
- ground pepper

Cut the salmon into cubes and mix with the shallot cubes.

Peel the potatoes and grate them coarsely. Press a quarter of the mixture between two sieves or into a basket mold to form small nests. Fry in hot oil (about 170 °C) until golden brown. Drain on kitchen paper. Fill the nests with salmon.

Whisk the cream until stiff peaks form, season with salt, horseradish and pepper. Spoon a dollop onto each salmon-filled nest and sprinkle with grated horseradish before serving.
