The bean tomato salad with onions from Spoonsparrow is quick to make and really tasty!

Ingredients

  • 400 g cherry tomatoes
  • 400 g small white beans (drained weight; canned)
  • 1 Red Onion
  • 3 tbsp white wine vinegar
  • 75 ml vegetable broth
  • 1 tsp sharp mustard
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 4 sprigs Parsley

Instructions

    Wash the tomatoes and halve them. Rinse the beans under cold water and drain. Peel the onion and slice into thin rings.

    Whisk together the vinegar, broth, mustard, and oil; season with salt and pepper.

    Combine the vegetables and dressing, divide among four plates, and garnish with parsley.
