Bean Shrimp Balls

Ingredients
- 500 g kidney beans
- 1 onion
- peanut oil (for frying)
- 150 g dried shrimp
- 1 handful coriander leaves
- chili sauce
- Salt
Instructions

Soak the beans overnight in plenty of cold water. Drain the next day, rub off the skins and let them drain well.

Peel and finely dice the onion. In a hot pan, sauté with 1 tablespoon oil until translucent.

Let cool, then mix into the beans and blend to a fine puree in portions. Chop the dried shrimp.

Rinse the coriander leaves, dry by shaking and pick the stems. Add to the bean paste and blend one portion.

Combine everything in a bowl, mixing well until a firm mass forms. If needed, add a little cold water.

Season with chili sauce and salt.

Shape small balls with 2 tablespoons (or wet hands) and fry in hot oil (~170°C) for 4-5 minutes per side until golden brown. Drain on paper towels.

Keep warm in the oven if desired until all balls are fried.
