Bean Salad with Apple‑Turmeric Dressing

Ingredients

  • 4 tbsp apple sauce
  • 3 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 2 tsp turmeric
  • Salt
  • Pepper
  • 200 g canned cannellini beans (small white beans)
  • 200 g canned red beans
  • 200 g Green beans
  • Salt
  • 1 Red Onion
  • 30 g dried cranberries

Instructions

    Whisk apple sauce with vinegar, olive oil and turmeric; season with salt and pepper.

    Place both bean varieties in a colander, rinse under cold water and drain. Toss with the dressing and cover for 30 minutes to marinate.

    Rinse green beans, trim ends and cut into 1 cm pieces. Boil in salted water for 9 minutes. Drain, shock in ice water and let drain again.

    Peel and finely dice the onion. Mix green beans, onion and cranberries with the red and white beans. Taste again and serve.
