Bavarian Sausage Salad

Ingredients
- 600 g coarse pork sausage (e.g., Regensburger)
- 125 ml lukewarm meat broth
- 1 tsp sharp mustard
- 3 tbsp red wine vinegar
- Salt
- black pepper (freshly ground)
- 3 tbsp germ oil
- 1 Red Onion
- 0.5 bunch Chives
Instructions

Peel the sausage, slice it thinly and place in a bowl.

Combine lukewarm broth, mustard, vinegar, salt, and pepper; whisk in the oil and pour over the sausage slices. Mix well and let marinate for at least 1 hour.

Before serving peel the onion and cut into rings. Wash the chives, shake dry, and cut into small rolls. Fold both into the salad. Taste again and garnish with a lettuce leaf if desired.
