Ingredients

  • 300 g red currants
  • 250 g strawberries
  • 200 g Raspberries
  • 200 g blackberries
  • 100 g sugar
  • 0.5 l red currant juice
  • 0.5 lemon (juice)
  • 30 g cornstarch
  • mint
  • 4 scoops vanilla ice cream
  • 4 physalis
  • 1 starfruit

Instructions

    Reserve 4 small sprigs of currants, strip the rest from the stems with a fork and wash. Clean strawberries, raspberries, and blackberries. Put 200 g red currants, half the strawberries, raspberries, and blackberries into a pot, sprinkle with sugar, add lemon juice and currant juice, and heat. Simmer for a few minutes, strain through a sieve, re‑bring to boil. Whisk cornstarch with some cold water, stir into the fruit puree, bring to a boil several times. Add remaining fruits, warm briefly, pour into bowls, refrigerate. Before serving add leftover currants and plate.

    Open the physalis, wash the starfruit and slice it. Garnish the Rote Grütze with fruits and mint and place the ice cream scoops on top.
