Ingredients
- 250 g Spinach
- 100 g basil
- Salt
- 3 tbsp pine nuts
- 1 clove garlic
- 100 ml olive oil
- 3 tbsp freshly grated Parmesan
- black pepper (freshly ground)

Rinse the spinach and basil, trim or pick leaves, and blanch together in boiling salted water for a short time. Shock in cold water, squeeze out excess moisture, and roughly chop.

Toast the pine nuts in a dry pan until golden brown. Let cool and set aside 1 tsp for garnish. Peel the garlic. Roughly blend the spinach, basil, garlic, olive oil, and remaining pine nuts in a blender. Stir in Parmesan and season with salt and pepper.
