Herb Spaghetti with Porcini Mushrooms

Ingredients
- 400 g spaghetti
- Salt
- 1 onion
- 1 red chili pepper
- 300 g mixed mushrooms (e.g., chanterelles, porcini)
- 3 tbsp olive oil
- 100 ml dry white wine
- Pepper (freshly ground)
- 1 Garlic clove
- 150 ml Heavy Cream
- 2 tbsp freshly chopped herbs (e.g., parsley and basil)
- 4 tbsp freshly grated Parmesan

Cook the pasta in salted water until al dente. Peel and finely dice the onion. Wash, trim, and finely chop the chili pepper. Clean the mushrooms and slice them.

Sauté the onion and chili in 2 tablespoons of hot oil, add the mushrooms, and cook for 2-3 minutes until golden brown. Deglaze with white wine, season with salt and pepper, then set aside.

Peel and finely mince the garlic, briefly sauté it in the remaining oil, then pour in the cream. Add the herbs and the drained pasta (add a splash of pasta water if needed). Season with salt. Distribute the mushrooms on plates, top with the pasta, and sprinkle with Parmesan before serving.
