Spaghetti with Garlic, Oil, and Chili (Aglio, olio e peperoncino)

Spaghetti with garlic, oil, and chili (Aglio, olio e peperoncino) from Spoonsparrow are always a hit!

Ingredients

  • 1 chili pepper
  • 3 cloves garlic
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 500 g spaghetti
  • 20 g Parmesan cheese (1 piece)
  • 10 g basil (1 handful)

Instructions

    Wash the chili peppers, halve them, remove the seeds and membranes, then dice them finely. Peel the garlic and slice it thinly.

    Cook the pasta al dente in plenty of salted water according to package instructions.

    Heat the oil in a pan, sauté the garlic and chili peppers without browning, season lightly with salt and pepper. Drain the pasta, reserving 100 ml of pasta water. Add the spaghetti to the pan and mix well. Stir in the pasta water in small portions and season with pepper. Serve on warmed plates. Freshly grate Parmesan over it. Wash the basil, shake it dry and distribute it on the plates.
