Ingredients

  • 500 g spaghetti
  • Salt
  • 2 Handfuls Basil
  • 2 Garlic cloves
  • 50 ml olive oil
  • 40 g pine nuts
  • 40 g parmesan (freshly grated)
  • 6 dried tomatoes
  • 4 salmon fillets (about 120 g each)
  • 1 tbsp butter
  • 100 ml heavy cream
  • basil (for garnish)

Instructions

    Cook the pasta according to package instructions in plenty of boiling salted water until al dente. Drain and set aside. Meanwhile, wash and dry the basil, peel and quarter the garlic. In a mortar, blend basil, garlic, olive oil, pine nuts, and parmesan into a pesto. Slice the dried tomatoes into strips.

    Wash the salmon and pat dry with paper towels. Season with salt and pepper. Heat a grill pan and cook the salmon on both sides for a total of 6–8 minutes.

    While the salmon cooks, melt butter in a non-stick skillet. Add the spaghetti and stir to warm. Pour in the cream and simmer for 1–2 minutes. Remove from heat, fold in the pesto, and season with salt and pepper.

    Plate the spaghetti and place the salmon fillets on top. Garnish with sliced dried tomatoes and basil leaves.
