Basil and Parmesan Terrine

Ingredients
- 2 Handfuls Basil
- 400 ml whipping cream
- 200 ml milk
- 80 g grated parmesan
- 10 eggs
- Salt
- Pepper (freshly ground)
- 3 tomatoes
- fresh basil for garnish

Preheat the oven to 140 °C fan. Wash and dry the basil, shake off excess water and cut into strips. Whisk together cream, milk, parmesan, basil and eggs; season with salt and pepper.

Line a baking dish with parchment paper and pour the mixture in. Bake for about 40 minutes until fully set (test with a skewer). Let cool in the turned-off oven and refrigerate for about 3 hours.

Meanwhile wash, core, quarter and dice the tomatoes. Remove the terrine from the pan, carefully lift off the parchment and sprinkle with tomato cubes. Garnish with basil.
