Baru Nut Bowl

Ingredients
- 300 g red cabbage
- Salt
- 0.25 Cucumber
- 2 Tomatoes
- 2 Zucchini
- 0.5 romaine lettuce
- 15 Baru nuts
- 0.5 lemon
- 4 tbsp olive oil
- 0.5 tsp mustard
- 1 tsp Honey
- Pepper
- 2 sprigs parsley
Instructions

Clean the red cabbage, remove the stem base, wash and cut the remaining cabbage into fine strips. Place in a bowl, season with salt, and knead vigorously for 3 minutes.

Wash and trim cucumber, tomato, and zucchini. Slice cucumber lengthwise into thin rounds, dice tomatoes, and spiralize zucchini into noodles. Clean, wash, and slice romaine lettuce into strips.

Squeeze the lemon and whisk its juice with 3 tbsp oil, mustard, honey, salt, and pepper to make a dressing. Finely chop Baru nuts and add about half to the dressing. Wash parsley, shake dry, and add it to the salad sauce as well.

Saute zucchini in a pan with remaining oil for about 5 minutes over medium heat. Season with salt and pepper.

Arrange salad and vegetables in bowls, sprinkle with remaining Baru nuts, and drizzle dressing on top.
