Barley Bread

Ingredients

  • 2 cups barley flour
  • 2 tbsp sesame oil
  • 4 cups whole wheat flour
  • crushed millet (roasted sunflower seeds or sesame seeds)
  • 1 tsp salt
  • 2 tbsp corn germ oil
  • 3 cups boiling water

Instructions

    Roast the barley flour in a pan with the sesame oil until dark but not burnt. Then mix with the whole wheat flour, millet and salt, add the corn germ oil and rub the flour between your hands until oily.

    In small portions stir in the boiling water with a spoon until the dough begins to bind. Knead the dough smoothly with your hands. Dip your hands into cold water to cool them.

    Place the dough in an oiled loaf pan, cut a deep wedge along its length on the surface. Let it rise for 2 to 6 hours or overnight.

    Preheat the oven to 230 °C and bake the bread 20 minutes on the middle rack, then another 40 minutes at 200 °C on the upper rack.
