Whole Wheat Spelt Bread
A wholesome whole wheat spelt bread recipe featuring fresh ingredients from the grains category, brought to you by Spoonsparrow!
Ingredients
- 275 g spelt whole wheat flour
- 100 g spelt groats
- 50 g flax seeds
- 50 g rolled oats
- 50 g sesame seeds
- 400 ml lukewarm water
- 150 g strong sourdough starter
- 1 tbsp salt
- 1 tbsp agave syrup

Mix the flour with the groats, flax seeds, oats and sesame in a bowl. Add the water, sourdough starter, salt and agave syrup, then knead vigorously with a stand mixer for about 5 minutes. The dough should be very soft and usually needs no extra flour. Cover the dough and let it rise to double its volume in a warm place; this takes roughly 3–6 hours. Optionally, you can refrigerate the dough overnight.

Afterward, knead the dough again and shape it into a loaf or cylinder. Cover with a cloth and rest for another 1–2 hours.

Preheat the oven to 250 °C (fan). Place a pan of hot water on the bottom rack. Put the loaf in the middle of the oven, then after about 5 minutes reduce the temperature to 200 °C and bake for an additional ~40 minutes until golden brown.
