Banana Oatmeal Cookies

Ingredients
- 0.5 bio lemon
- 1 Banana
- 250 g Oatmeal
- 150 g spelt whole‑grain flour
- 1 packet baking powder
- 125 g Starch
- 100 g cane sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 0.5 tsp cinnamon
- 2 Eggs
- 5 g cocoa powder (1 tsp)
Instructions

Rinse half a lemon hot, pat dry and finely grate 1 pinch of zest. Squeeze out the juice. Peel the banana and blend with 1 tbsp lemon juice in a blender until smooth.

Combine oatmeal with the banana puree in a bowl. Mix spelt flour and baking powder together and add to the mixture. Stir in starch, cane sugar, vanilla sugar, a pinch of salt, cinnamon, and lemon zest. Finally add the eggs and mix into a smooth dough.

Using a teaspoon, scoop equal portions of dough and shape them into balls with your fingers. Place them 4 cm apart on a parchment‑lined baking sheet and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 25 minutes until light brown.

Remove the banana oatmeal cookies, dust with cocoa powder, and let cool completely.
