Ingredients

  • 75 g butter
  • 75 g brown sugar
  • 2 Eggs
  • 150 g spelt flour
  • 1 tsp Baking powder
  • 4 tbsp milk
  • 40 g softened butter
  • 60 g powdered sugar
  • 100 g plain cream cheese
  • 300 g dark chocolate
  • zuckerpüree (various sizes)
  • cocoa powder

Instructions

  1. 1.

    Cream the butter with the sugar and gradually add the eggs. Mix the spelt flour with the baking powder and alternately stir it into the butter‑egg mixture with milk until a thick, doughy batter forms.

    Fill this into a springform pan lined with parchment paper and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 30 minutes, checking with a toothpick. Remove the cake, let it cool completely, loosen from the pan and crumble into a bowl.

    Beat the butter with powdered sugar until light‑white, then gradually fold in the cream cheese. Mix this cream with the cake crumbs and form small balls. Chill for about an hour in the refrigerator.

    Chop the chocolate and melt it over a hot, non‑boiling water bath; remove from heat and let cool slightly.

  5. 5.

    Insert one Cake Pop onto a lollipop stick, dip it into the slightly cooled chocolate, allow excess to drip off, then roll in sugar pearls or cocoa powder. Place the finished Cake Pops on a clean can for drying.
