Ingredients

  • 75 g butter
  • 75 g beet syrup
  • 350 ml malt beer
  • 1 cube fresh yeast
  • 600 g rye flour
  • 0.25 tsp cloves powder
  • 0.25 tsp cinnamon powder
  • 0.25 tsp Ginger powder
  • 200 g raisins
  • butter (for the pan)
  • flour (for the pan)

Instructions

  1. 1.

Melt the butter with the syrup in a pot and let it cool to lukewarm. Add the beer and crumble the yeast into it, stirring until dissolved. Mix the flour with the spices, salt, and raisins; place in a bowl and press a well in the center.

  2. 2.

Slowly pour the yeasted beer into the mixture and knead with the dough hooks of an electric hand mixer until smooth. Cover and let rise in a warm spot for 45 minutes. Preheat the oven to 200°C (Oven + fan). Grease a loaf pan and dust it with flour.

  3. 3.

Shape the dough into a loaf, place it in the pan, score a chessboard pattern with a knife, and brush with cold water. Bake in the preheated oven for 30-40 minutes.
