Banana Crêpes

Ingredients

  • 2 tbsp yogurt butter
  • 75 g flour
  • 1 egg
  • 150 ml milk
  • a pinch salt
  • 1 Lime
  • 2 Bananas
  • 2 tbsp honey
  • 1 tbsp butter

Instructions

    Melt 1 tablespoon of yogurt butter in a pot and let it cool slightly.

    Whisk together the flour, egg, milk, liquid butter, and a pinch of salt to make the crêpe batter; let rest for about 10 minutes.

    Squeeze the lime. Peel and cube the bananas for the filling.

  4. 4.

    Caramelize honey in a pan with the remaining yogurt butter, then deglaze with lime juice and stir in banana cubes. Remove from heat.

    Melt butter in a hot skillet. Cook four crêpes from the batter over medium heat, about 2 minutes per side.

    Remove crêpes from the skillet, fill with bananas, roll up, and cut in half.
