Ingredients

  • 1 kg white cabbage
  • 4 tbsp pork lard (or vegetable oil)
  • 1 tbsp caraway seeds
  • 1 glass white wine
  • 250 g pork meat, cut into cubes
  • 500 g mixed ground meat
  • 2 onions
  • Pepper
  • Salt
  • smoked ham

Instructions

    Clean a white cabbage head of about two pounds, remove the outer leaves and cut out the stem with a sharp knife. Then place it in boiling salted water for about 5 minutes, drain in a sieve and loosen a dozen leaves.

    Finely chop the remaining cabbage and sauté with 2 tbsp pork lard (or vegetable oil), 1 tbsp caraway seeds and 1 glass white wine for about 10 minutes in a pot.

    Preheat the oven to 175 °C. Meanwhile, quickly brown half a pound of cubed pork meat and one pound of mixed ground meat, along with two finely chopped onions, in a pan with 2 tbsp pork lard (or vegetable oil). Season with pepper and salt and mix into the sautéed cabbage.

    Fill everything into a greased, fire‑proof dish lined with cabbage leaves, cover with more cabbage leaves and top with thin slices of smoked bacon. Bake in the preheated oven at medium heat for about 45 minutes. Serve directly from the dish.
