Ingredients
- 2 Zucchini
- 2 small eggplants
- 6 tbsp Olive oil
- Salt
- Pepper (freshly ground)
- 1 tbsp thyme leaves
- 350 g cocktail tomatoes
- 2 tbsp freshly chopped basil
- basil (and thyme for garnish)

Wash the zucchini and eggplant, trim ends and slice thinly. Mix oil with salt, pepper and thyme and lightly brush slices. Alternate slices onto 8 small towers and secure with a skewer. Wash tomatoes and halve them. Skewer one tomato half onto each tower and place in an oiled baking dish. Toss remaining tomatoes with leftover seasoning oil and distribute around the towers. Bake in oven for 15-20 minutes.
