Baked Artichokes with Spicy Breadcrumbs

Ingredients
- 8 small artichokes
- Sea salt
- 3 Garlic cloves
- 7 anchovies (jarred)
- 7 sun‑dried tomatoes (in oil)
- 0.5 handful fresh parsley
- 80 g breadcrumbs
- 5 tbsp freshly grated Parmesan
- 6 tbsp Olive oil
- black pepper (ground)
- 60 ml dry white wine
- 60 ml vegetable broth

Clean, rinse the artichokes; remove outer tough leaves, trim stems, peel and halve them. Remove the choke and simmer in salted water for 6‑7 minutes until slightly firm. Cool, pat dry, and place cut sides up in a baking dish.

Preheat oven to 200 °C (400 °F) with fan or top/bottom heat. Peel and finely mince garlic. Drain anchovies and tomatoes, then dice them small. Wash parsley, shake off water, strip leaves and chop finely. Mix breadcrumbs with cheese, parsley, tomatoes, anchovies, and oil; season with salt and pepper. Spread the mixture over the artichokes. Pour wine and broth on the side and bake for about 15 minutes until golden brown.
