- 3 large tomatoes (e.g., eggplants)
- 1 onion
- 2 Garlic cloves
- 4 tbsp olive oil
- 125 g sheep cheese
- 2 sprigs parsley
- Salt
- Pepper (freshly ground)

Preheat the oven to 180°C fan.

Wash and halve the tomatoes. Slice the onion. Peel the garlic and press it into a small bowl with the olive oil. Slice the cheese. Wash, dry, shake off the parsley stems, pick off leaves and roughly chop them. Place the tomatoes in an ovenproof dish and top with the cheese. Distribute the onions over them and drizzle with the garlic‑oil. Season with salt and pepper and bake for 5–8 minutes until the cheese starts to melt. Sprinkle with parsley before serving. Fresh baguette pairs well.
