Baked Veal Cutlets with Fried Zucchini

Ingredients
- 300 g zucchini
- 3 eggs (size M)
- 40 g flour
- 100 g breadcrumbs
- 4 veal cutlets
- Salt
- pepper from grinder
- 8 tbsp olive oil
- 20 g butter
- 1 lemon
- parsley (for garnish)

Quarter zucchini lengthwise and cut into 1 cm thick pieces. Beat eggs with a fork in a bowl. Sift flour into one shallow dish, pour breadcrumbs into another shallow dish. Season veal cutlets with salt and pepper, coat them in flour and tap off excess. Dip the cutlets through the beaten eggs and then coat them in breadcrumbs.

Heat 2 tbsp oil in a pan, fry zucchini over high heat for 2–3 minutes, seasoning with salt and pepper. Heat remaining oil in a large pan, cook veal cutlets over medium heat for 3–4 minutes on each side. Just before the end of cooking, add butter and drizzle it over the cutlets. Cut lemon into wedges. Serve the lemon wedges and parsley with the cutlets.
