Baked Trout

Ingredients

  • 4 trout approx. 250 g each (ready to cook)
  • Salt
  • black pepper (ground)
  • 2 tbsp flour
  • 3 Tbsp plant oil
  • 2 shallots
  • 1 Garlic clove
  • 100 g butter
  • 4 tbsp freshly chopped herbs
  • Lemon slices (for garnish)

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Rinse the trout and pat dry. Season inside and out with salt and pepper, then coat the skin side in flour. In hot oil brown each side slowly for about 5 minutes until golden brown. Place on a parchment-lined baking tray and bake in the oven for about 15 minutes to finish cooking.

    Peel and finely dice the shallots and garlic. Sauté both in hot butter for 1-2 minutes until translucent. Remove from heat, stir in herbs, salt, and pepper.

    Place the trout on plates and drizzle with herb butter.

    Serve garnished with lemon slices.
