Baked Sweet Potatoes

Ingredients
- 4 sweet potatoes (about 200 g each)
- 40 g Butter
- 2 tbsp Lime juice
- Salt
- black pepper (freshly ground)
- 2 Tomatoes
- 40 g coarsely grated cheese (Gruyère)
- 1 Tbsp parsley
Instructions

Wash the sweet potatoes, rinse with cold water, bring to a boil and cook covered for about 20 minutes. Drain and let cool slightly.

Cut a lid from each sweet potato lengthwise and carefully scrape out the flesh with a teaspoon, leaving a ~0.5 cm thick rim. Peel off the lids and finely chop the scooped-out flesh. Mix this with butter, lime juice, salt, and pepper.

Briefly blanch the tomatoes, shock in cold water, peel, quarter, seed, and dice into small cubes.

Fill the sweet potato shells with the mixture, place them in a greased baking dish, sprinkle with cheese, and bake under a hot grill for about 2 minutes until browned.

Serve by adding a dollop of sour cream to each and topping with tomatoes and parsley.
