Grilled Shrimp and Vegetables in Lemon Vinaigrette

Ingredients

  • 2 kohlrabi
  • 2 large zucchini
  • 1 bundle (large) spring onions
  • 2 lemons (juice)
  • iodized salt
  • black pepper freshly ground
  • 1 tbsp Olive Oil
  • 1 tsp Sesame oil
  • fresh lemon thyme
  • 750 g raw shrimp, headless

    Peel the kohlrabi, cut into thick slices and cook in lightly salted water for about 5 minutes. Drain. Slice zucchini lengthwise into thick pieces. Trim spring onions. Mix lemon juice, salt, pepper and olive oil; shake thyme leaves dry, remove stems, add to the dressing.

    Toss the vegetables in the dressing. Grill them in a grill pan to taste, set aside. Heat sesame oil in the same pan and grill the shrimp 3–4 minutes per side, seasoning as you go. Deglaze with lemon vinaigrette. Plate the grilled shrimp and vegetables on plates.
