Ingredients
- 500 g large shrimp (in shell)
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- olive oil (for brushing)
- 1 small can apricots
- wooden skewers

Cut a slit in the shrimp shells with scissors and remove the dark vein, leaving the shells intact. Rinse the shrimp under cold water, pat dry with paper towels, and drizzle with lemon juice. Drain the apricots.

Pat the shrimp dry again, season with salt and pepper, and brush with olive oil. Alternate threading shrimp and apricot halves onto the skewers. Oil the grill grates and grill the skewers over high heat for about 2 minutes per side.
