Ingredients
- 2 handfuls of sage leaves
- 2 anchovies
- 150 g flour
- 1 tsp Baking powder
- 1 tbsp Olive Oil
- Salt
- vegetable oil (for frying)
Instructions

Rinse the sage leaves and pat them dry. Pat the anchovies dry and finely chop them.

Combine the flour, baking powder, olive oil, and chopped anchovies in a bowl; gradually stir in cold water (~300 ml) until a thick batter forms. Season with a pinch of salt if desired.

Dip each leaf into the batter and fry in hot oil (≈170 °C) for about 1 minute until golden brown. Drain on paper towels and serve.
