Shrimp Skewers with Chili Herb Dip

Ingredients

  • 1 Organic Lime
  • 2 Garlic cloves
  • 1 small dried chili pepper
  • spring onions
  • 2 sprigs Mint
  • 600 g jumbo shrimp (prepped)
  • 2 tbsp olive oil
  • 150 ml Vegetable broth
  • 1 tsp dill sprigs
  • Salt
  • Pepper

Instructions

    Wash the lime hot, pat dry, grate the zest and squeeze out the juice. Peel and finely chop the garlic. Smash the chili pepper in a mortar.

    Wash spring onions, shake dry, cut into rounds. Wash mint, shake dry and finely chop the leaves.

    Wash shrimp, pat dry and skewer them on wooden sticks. Heat 1 tsp oil in a pan and fry the shrimp for 2–3 minutes on each side.

    In a pot heat remaining oil and sauté garlic with smashed chili. Deglaze with broth, stir in lime juice and zest, remove from heat and let cool. Mix in all herbs and season with salt and pepper.

    Arrange skewers on plates, drizzle with sauce and serve.
