Baked Rice Balls

Ingredients
- 150 g mozzarella
- 50 g Parmesan
- 300 g round grain rice
- 2 Eggs
- 2 tbsp butter
- 4 Tbsp breadcrumbs
- 2 tbsp flour
- Salt
- Pepper (freshly ground)
- clarified butter or oil (for frying)
- bay leaf (for garnish)
Instructions

Bring 0.5 l of salted water to a boil in a pot, add the rice and simmer over low heat while stirring frequently until it softens; stir in parmesan at the end, let cool slightly, then mix in 2 tbsp butter and 1 egg.

Beat 1 egg in a deep dish, lightly salt and pepper it.

Cut the cheese into small cubes.

Take about 10 portions of cooled rice, each roughly the size of an orange, and shape them into balls. Press a depression in the center with your finger, fill it with about 1 tbsp of cheese, seal the opening with more rice, dust the balls with flour, then dip first in egg and finally in breadcrumbs. Place carefully on a towel.

Heat clarified butter or oil in a deep pot and fry the rice balls portion by portion. Drain on kitchen paper and serve, for example, with tomato salad.
